Guys, I was SO shocked by how well this pizza turned out. Seriously SO delicious. It satisfied any pizza craving I possibly had. I’m not a huge pizza person (I can go with or without it); however my husband is, and he gets it constantly. So of course, when it’s around I’m easily tempted. I’ve been wanting to try a “healthy” pizza alternative for a while now and am so glad I finally had the opportunity. This recipe (adapted from Maria Emmerich’s “Dutch Baby Pizza” in her book, The Ketogenic Cookbook) is a definite winner. I will undoubtedly make this again and again, and play with different toppings.
As you will see, I did a prosciutto, arugula version this go round (one of my all-time favorite combinations), but you can definitely change it up. I think a Greek version (with kalamata olives, spinach and feta) would be delish or perhaps pepperonis, bell peppers and banana peppers. The options are endless!
I hope you enjoy this recipe as much as I did. Is it not SO relieving to know there are healthy alternatives out there for foods that traditionally fall on the not-so-healthy spectrum?!
