This is a regular on our dinner rotation, particularly when we, or one of our friends, catches fresh fish. The best! You can easily trade out the sole for red drum, which is a common catch here in New Orleans.
This dish looks quite stunning when it’s plated, and truth be told it is actually very easy to make; one reason we do it so often. It is perfect for weeknights when you’re looking for something on the lighter side but still hits the spot.
I adore the flavor combination of lemon and capers. I could seriously add them to almost anything. We also love to add mushrooms to our dish, which you will see is optional in the recipe. I also highly suggest pairing this dish with greens of some sort. Broccoli or asparagus are my personal favorites.
Enjoy this light, satisfying meal!
