Superfood Energy Balls

The perfect on-the-go boost of energy! These little treats will become your go-to snack. And don't feel bad about eating them. They're not only packed with energy-boosting/superfood goodness but healthy protein and fat as well. Both energizing and satiating!

- 1 cup almond flour
- 1 cup raw almonds, finely ground in food processor
- 3 cups oat bran (I use Bob's Red Mill GF Oat Bran)
- 1 teaspoon vanilla bean powder
- 1 teaspoon pink salt
- 1/2 cup almond butter
- 1 cup maple syrup
- 1/2 cup cacao nibs
- 1 tablespoon maca powder
- Combine all ingredients in a large bowl and mix thoroughly. I like to use my hands to get everything fully combined. Roll the dough into small or medium balls (whatever size energy balls you desire). Place the balls on a baking sheet and set in the fridge to firm up. Your energy balls will be ready to eat and get you that blissful energy you desire in as little as 10 minutes! There are countless ways to change this recipe up. You can add in dried fruit (like cherries or goji berries); nuts or seeds, protein powder, maca, cacao or even adaptogens like cordyceps (for an additional boost of energy). I like to top the balls with something fun for color/variation, such as matcha. The options are endless - have fun with these!
